The increasing world wide demand for pasta has radically changed the entire industrial sector of pasta production. Therefor it was necessary to make wider research on the subject. This research has produced new means of production including the branch of dies resulting in the use of the most advanced technologies. As mentioned above, the last few years has seen pasta widen it's presence on every world market even changing it's shape according to local taste and tradition. It is noteworthy that some pasta shapes are appreciated in some countrys but not in others. This is a very important fact, for while this prevents standardization in die production, it is an incentive to keep on studying the state of the market.
